HEALTHY LUNCH AND DRINK IDEASS!!

By now most of our New Year’s resolutions have gone down the drain, so today im going to show you some healthy-ish recipes to kickstart a healthier lifestyles

1. MINT CUCUMBER LEMONADE

Now these drinks aren’t the healthiest but they are better than having coke or sprite. This first drink may seem a bit weird but it is amazing!

WHAT YOU WILL NEED:

– A quarter of a cucumber

– A handful of leaves from a mint bush

-5 Tablespoons of lemon juice

-1 cup of Water

– 3 teaspoons of sugar

Mash the cucumber, mint and sugar together with a spoon or fork, then add your lemon juice and water. Strain your liquid through a cocktail shaker or strainer and enjoy!  

2. STRAWBERRY MANGO LEMONADE

As you guys have probably noticed I’ve become quite obsessed with lemonade, as ive been longing for summer and this drink looks and tastes amazing ( it seriously reminds me of kool aid!! )and it also makes around 3/4 glasses

WHAT YOU WILL NEED:

-Two bags of strawberry mango tea ( i used twinings)

-A handful of strawberries

-6 Tablespoons of Lemon Juice

-3Tablespoons of sugar

Make you tea in a bowl and put it in the fridge to cool down while you mix the rest of the ingredients together. Cut up your handful of strawberries into small cubes ,and in a jug mix the rest of your ingredients. Once your tea in cooled add it in along with the strawberries and tada, a tumblr drink that tastes as good as it looks.

3. CHICKEN HONEY MUSTARD SANDWHICH

I thought I’d show you this recipe because it is my favourite sandwich combo and I eat it religiously, sandwiches can become boring on a day-to-day basis and by the end of the week were eating mouldy bread with a scrap of ham ( ok maybe now that bad, but you get the idea!) so hopefully this recipe will help you get inspiration for those boring sandwiches.

WHAT YOU WILL NEED:

-A tomato

-A handful of spinach leaves

-2 tablespoon of honey and 1 3/4 tablespoons of mustard ( for the dressing!) ((optional))

– Choice of meats ( chicken, turkey, ham )

– Mozerella cheese

– Wholemeal bread

I like to toast my bread to stop it getting soggy, and mix the honey and mustard to make the spread, then layer on your topping however you like but make sure to put the tomato in between to stop bread becoming soggy

SNACKS

STRAWBERRY MINI MUFFINS

This recipe makes around 36 muffins so you can make these at the start of the week and have all your snacks for the week stored.

WHAT YOU WILL NEED:

– 12- 14 Strawberries

–  2 cups flour

-12cup sugar

– 1tablespoon of baking powder

–  12teaspoon salt

–  34cup alomnd milk

–  13cup cocount oil

– 2 teaspoons of vanilla

– 1 egg

Heat up your oven to 180C and spray your muffin pan with pam. In a large bowl mix the sugar,flour and baking powder. In a medium bowl mix the eggs, almond milk, vanilla, cocount oil. Combine the two mixtures together and pour into the muffin pans. Chop up your strawberries into slivers and lay on top of the mixtures and bake for around 15 minutes and allow to cool.

HEALTHY WINTER BREAKFAST IDEAS

Its one day until December, omg, the land of  Christmas trees and candy canes, i cannot wait for the holiday season to come so to start it off with a bang i thought id show you guys some Winter breakfast recipes that are quick, fast and a little festive!<3

1. APPLE CINNAMON OATMEAL

i found this recipe on pinterest and had to try it you can make this delicious festive breakfast the night before, to save time.

WHAT YOU WILL NEED:

2 Apples, peeled and cut into 1/2 inch pieces

1 1/2 tsp Milk

2 tsp Brown sugar or any sweetener of your choice

1 cup of Oats

1 1/2 cups of Water

1 tsp of Chia Seeds

1/2 Cinnamon

Slower Cooker

Toppings- raisins, maple syrup, nuts

METHOD

Put all your ingredients into the slow cooker. Stir,cover and cook on a low heat for seven hours or over night. The next morning spoon into bowls, this makes about six servings. If you want to save this it keeps in the fridge  for up to a week, reheat the leftovers in the microwave for one minute.

2.CINNAMON BLUEBERRY PANCAKES

WHAT YOU WILL NEED

200g self-raising flour

1 tsp baking powder

1 egg

300ml milk

one knob butter

150g pack blueberries

1 tsp of cinnamon

sunflower oil or a little butter for cooking

golden or maple syrup

METHOD

Mix together the flour, baking powder and a pinch of salt in a large bowl. Beat the egg with the milk, make a well in the centre of the dry ingredients and whisk in the milk to make a thick smooth batter. Beat in the melted butter, and gently stir in half the blueberries and cinnamon.

Heat your pan on low and melt your knob of butter. Drop a large tablespoonful of the batter per pancake . Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden. Serve with the rest of the blueberries

3. PEPPERMINT PANCAKES

I know i have two pancake recipes but omg these pancakes are amazing, and they are so festive aswell. I also got this recipe on pinterest

WHAT YOU WILL NEED

1 1/2 cups all-purpose flour

3 1/2 tsp baking powder

1 tsp salt

1 tsp  sugar

1 1/4 cups milk

1 egg

3 tablespoons butter, melted

4 mini candy canes/2 large candy canes, crushed and divided

METHOD

Mix dry ingredients well in one bowl and the wet ingredients in another and add 1/2 crushed candy canes, its okay if its a little lumpy. Heat up your pan and pour some batter on you can make normal ones and a HUGE massive one.When you see bubbles on the pancakes, flip, add crushed peppermint to top of pancake after being flipped. Ta da amazing pancakes!

FALL HEALTHY BREAKFAST RECIPE IDEAS

Breakfast is the most important meal of the day..right? So why not make it tasty! But sometimes we get stuck in a rut and making amazing food can be alot of hard work,today i’m going to show you some healthy breakfast ideas which are fast and easy. These are some-what healthy but its better than stuffing your face with any leftover Halloween candy.

1 –  OVERNIGHT CHIA SEED PUDDING!

Pudding? For breakfast? YES! Chia seeds are amazingly healthy for you and they contain healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

WHAT YOU NEED:

– ¼ cup chia seeds or one packet

-1½ cup unsweetened almond milk

– 2 teaspoons of vanilla extract

– Any sweetener of your choice eg brown sugar, maple syrup

-Berries of your choice

Mix your chia seeds, almond milk, vanilla and sweetener ( i chose maple syrup) in a bowl and put in the fridge overnight. When you wake up put on any berries of your choices, eat it and your out the door. I love this because it really is so easy.

2- BANANA OAT PANCAKES

These pancakes are so healthy because its doesn’t have any flour and its full of vitamins and fiber and they’re so filling, You can make these in batches, freeze them and heat them up when you want them. You can also add ti these whatever you would like

WHAT YOU WILL NEED

-2/3 Bananas

-2 eggs

-½ cup oats

-½ teaspoon baking powder

– Any topping you would like!

-Maple syrup

Mash the bananas until they are a smooth past, you can make them as thick or smooth as you like.Combine the bananas, oats, any toppings you would like (i love blueberries) and baking power in a bowl.and bend them well. Heat up a frying pan with some non stick spray and pour the batter on. These cook fast so watch them. You know they’re done when their golden brown on each side. Eat them straight away or freeze them, they’re delicious ether way!

THESE MAKE ME SOOO HUNGRY

3. BANANA AND CREAM CHEESE STUFFED FRENCH TOAST

Sounds kinda weird right? Maybe but i finally had the courage to try these bad boys last week and i wasn’t disappointed! These take a little bit longer than the rest ( about 15 minutes ) but are well worth it! You can also use the leftover bananas from the last recipe

WHAT YOU WILL NEED:

-A few slices whole wheat  bread
-½ a banana
-1-2 tablespoons low-fat cream cheese
-½ tablespoon honey
-Tablespoon of cinnamon
-1 large egg
-2 tablespoons of almond milk or milk
-2 teaspoon vanilla extract

– Toppings of your choice

Spread the cream cheese on to one slice of the bread. Slice up the banana and lay this on top. One the other slice of bread sprinkle on the cinnamon and honey. Place the slices of bread together to form your sandwich! In a bowl whisk the egg, milk and vanilla. Place your sandwich in the eggy mixture, flipping over to cover both sides. Spray a pan and cook your sandwich on both sides until golden brown. Top with sugar and anything you like.

4- YOGURT PARFAIT

This for me is the easiest recipe but is still just as tasty!

WHAT YOU WILL NEED

-Greek yogurt , one pot

-Handful of granola

– Berries like raspberries,cherries, blueberries

– Brown sugar

Pour a little of the Greek yogurt into a bowl, add a few berries and some granola,but don’t stir. Repeat until you reach the top of the bowl. Sprinkle some brown sugar over the top and enjoy!

5- CINNAMON ROLL WAFFLES

Okay so these are defiantly not healthy! But they’re so insanely tasty that i had to show you guys these. I saw these on Kendall Jenner’s instagram and once i tried these i cant stop making them, i’m warning you guys they’re seriously addictive!

WHAT YOU WILL NEED:

– Can of cinnamon rolls

– Waffle maker

-Cooking spray

Open the can of cinnamon rolls and spray your waffle maker with cooking spray, place each roll and close the waffle maker. When they’re done finish with the icing that comes in the can.
